The dessert was created on April 27, 1927 by Don Orlando Castilian, Confectionery owner families in the city of Paysandu, Uruguay.
His name came anecdotally related to our native bird Chajá of many feathers and lightweight body, similar appearances to dessert.
The company has been characterized as family order, already the fourth generation since its inception in 1927.
We have tried to maintain the original features of dessert, so still a dessert craft.
